100+ attend salad luncheon
A steady stream of Rugby residents filed past a long table laden with spinach and strawberries in vinaigrette and other fresh treats last Thursday at the Heart of America Medical Center Auxiliary’s annual Spring Salad Luncheon, held at St. Paul Lutheran Church.
“We always have a very good turnout,” said organizer Vonnie Degenstein.
Co-organizer Beverly Paul agreed. “Oh, yes, very successful,” she said.
Paul said many people who’ve attended the luncheon for years consider it a tradition marking the beginning of spring.
“Yes, that’s how we feel that’s why we kind of like to have it right around (the first day of spring),” Paul said.
Degenstein, who estimated the event “has been going on for at least 25 years,” said the HAMC Auxiliary will donate the proceeds of the luncheon toward the medical center’s 3D mammography project.
The auxiliary collected free will donations for savory menu items such as spinach salad, German potato salad and a layered taco dish. Pasta salads included olives, assorted veggies and salami. An array of colorful fruit salads sat at the end of the buffet table, some dressed in creamy whipped topping.
“Taco salad is a big hit,” said Paul.
“We have the past few years had the option where we have takeout we have to-go boxes. If we have someone who can’t stay, or if they want to take it home to somebody else, we do offer that,” she added.
Degenstein said organization was the key to keeping a wide variety of dishes. She brought out a list of types of salads, and names of people who signed up to make them.
“There were 50 salads altogether,” Degenstein said, bringing out a chart of names written under several different categories. “They were all made by volunteers.”
“We regulate (the number of salad categories), so we have a big variety. We don’t just let people bring what they want; we ask what they’d like to make, and sign them up, or we’d have all pink cloud salads!”
Degenstein said 175 people attended the luncheon, and she looks forward to another one next year.
