Work on Mexican restaurant continues

Renovations and staffing challenges have delayed the opening of a new Mexican restaurant in Rugby.

Rancho Grande was slated to open in October. Owner David Serrato attributes the delay in opening to work on the former Cornerstone Cafe building, including making it “nice and comfortable.” This week, Serrato and company worked on installing new equipment and a station for wait staff, and they were also waiting on delivery of beverage dispensers. Serrato said he has also ordered food items to begin preparations.

Serrato said finding help has proven difficult. The restaurant is currently hiring for all positions and Serrato wants to hire locally.

Serrato hopes to open the restaurant in either the first or second week of December.

“Everything has been good so far,” Serrato said. “We’re planning to stay. We love it over here.”
